Postcard # 6- Making a Commitment to Health

Hello Again,

My journey so far has been dedicated primarily to accepting and coping with the consequences of a stroke that afflicted me just over 10 months ago but it must be remembered that it was probably over 20 years in the making.  
I recently began a course of physiotherapy at a new clinic and met yet another angel.  My first session with Maria has inspired me to take a new direction in my recovery.  She could not understand why, having suffered a stroke due to high blood pressure, I am still eating salt. Talking about her own family's experience with the stroke suffered by her grandmother she explained,
'You don't need added salt and after the first few weeks you will not even miss it. It is simply a matter of retraining your palette.'  'Your children will thank you for it, ' she added.  
So, that decided it.  
I went home and made a resolution. We had already made a start on having one veg juice meal a day.  Now, I decided to make Thursday a No-Salt Day. Fortunately my children were on board with this idea and I set myself a new challenge. This was to discover salt-free recipes that would ease our transition to a low-salt diet. 

I am surprised by how easy it is and now actually look forward to Thursday. Below I will share a few details of my experiment. Hope this will help you too. 

Week 1
Bfast- Freshly made porridge with added fruit but no sugar.
Lunch- Celery, carrot, apple and sweet potato ( CCAS) juice with a dash of parseley and ginger.
Supper: Dry spiced potato and green bean curry with chapaati. 
Week 2
Bfast- Porridge, as above
Lunch - CCAS as above
Supper- Pumpkin, celery, onion and pepper soup with home -made bread roll.  ( recipe available upon request)
Week 3:
Bfast- Banana, Blueberry and pineapple smoothie made with coconut water.
Lunch- mashed boiled veg. 
Supper- Cous Cous with sauted aubergine, spring onions, celery with  unsalted and unsweetened sweetcorn and chopped, sun dried tomatoes and a dash of balsamic vinegar.  DELICIOUS!

Having been brought up on a diet of delicious Indian cuisine, I have always believed that the true flavour of spices is only enhanced by a generous pinch of salt. However, there is no reason why this kind of meal has to be consumed on a daily basis.
 
I now hope, gradually to retrain my family's palette to a salt-free weekly diet with the occasional salty Indian meal to be enjoyed in all its glory.
